Our Journey of
PROEDGE Sharpening Service
is run by myself Robert Gibson

I am a professionally trained sharpener and
have been working as a chef for the past 30 years.
​
During my time as a chef I started getting interested in sharpening skills and
I travelled to England, Japan and USA to develop my skills.
​
Being married to a Japanese person I had a great chance to visit Sakai in Osaka,
where is very famous for its craftsmanship of quality knives.
​
In Sakai I had a great opportunity to be taught by wet stone sharpening master
Mr. Tanaka and learn the beauty of Japanese knives.
​
My journey continued to New Jersey and here I met my another teacher Warren
who taught me a lot in depth about sharpening skills.
​
In 2018 my dream came true when we converted our Ford van
into a mobile sharpening service.
